- 2tbsp soybean oil
- 400g cooked basmati rice (200g uncooked weight)
- 75g green peas
- 100g cooked prawns
- 2 eggs, beaten
- 1 tbsp light soy sauce
- 6 spring onions, trimmed and sliced
- ½ tsp sesame oil
1. Heat the oil in a large frying pan or wok until smoking. Add the pre-cooked rice and the frozen, stir-fry for 3-4 mins, then add the prawns and stir-fry for 1-2 mins more.
2. Pour on the beaten and stir over the heat for 1 minute until the egg is lightly scrambled. Add the soy sauce, spring onions, and sesame oil, toss together and serve.
Tips: You could replace the prawns with chopped chicken, or even tofu pieces.
