Mashed Potato (Aloo Bhorta)

Ingredients

• 2-3 medium sized potatoes

• 2 tablespoons mustard oil

• 4-5 cloves garlic

• 2-3 red chilies

• ¼ onion, thinly sliced

• Salt to taste

 

Directions

•             Roast garlic and chili on stove top or in the oven. Boil potato until soft.

•             Peel boiled potato and smoothly mash. Mash/paste garlic, chili and salt together. Add onion. Add mashed potato. Add oil and mix well.

 

Mashed Eggplant (Begun Bhorta)

Ingredients

• 1 medium eggplant

• 2 tablespoons mustard oil

• 4-5 cloves garlic

• 2-3 red chilies

• ¼ onion, thinly sliced

• Cilantro

• Salt to taste

 

Directions

•             Roast eggplant, garlic and chili on stovetop or in the oven until tender. Mash/paste garlic, chili and salt together. Add onion.

•             Add roasted eggplant and mash together. Add cilantro. Add oil and mix well.

 

Mashed Flat Beans (Shim Bhorta)

Ingredients

•             Flat beans – 1½ pounds, thinly cut

•             Onion – ½ cup, chopped

•             Garlic – 3 cloves, finely chopped

•             Salt – To Taste

•             Green Chilies – 3

•             Mustard Oil – 1 tablespoon

 

For Tempering

•             Mustard oil – 1 tablespoon

•             Green chilies – 2 pieces

•             Garlic – 1 clove, finely chopped

 

Directions

•             Add the garlic and let it get fragrant. Throw in the onions and fry till they look translucent. Stir for 3-4 minutes.

•             Cook the flat beans covered over the lowest heat for 10 minutes. Remove from heat and let it cool completely. It takes about 10-15 minutes.

•             Now make a paste of the cooked flat beans and chilies in a blender. Throw in a little water if required to make a fine paste.

•             Once the paste is ready, keep aside. In a pan, heat 1 tablespoon of mustard oil.

•             Chopped garlic and chilies in quick succession. Wait for it to get fragrant.

•             Add the cooked paste made from beans and sauté till most of the moisture is absorbed. This takes about 6-8 minutes. Once done, remove from heat and serve alongside white rice.

 

Mashed Tomato (Tomato Bhorta)

Ingredients

•             Tomato on vine – 5

•             Sliced  onions - 1/3 cup

•             Chopped fresh coriander - 1/3 cup

•             Burned dry red pepper - 2 (cracked)

•             Mustard oil - 1 tablespoon

•             Salt - 1 teaspoon

 

Directions

•             Pierce the tomato on top just with one stroke of fork. Don't pierce like eggplants. All the liquid will come out of it. Grill the tomatoes for 5-7 minutes on top and bottom, and for about 1 minute on the sides.

•             Other ways to cook it are: cook in oven at 350F for 15-20 minutes. Take in a bowl, and let it cool down. Mash it with hand.

•             Add the cracked, burned red pepper, oil, fresh coriander, salt, and onions. Mash and mix well. Adjust the seasonings and you are done! Serve with rice.
